How to cook a simple, healthy meal at home

COLORADO SPRINGS — With so many of us having to plan our meals at home now, how can you make sure you're getting what you need to be healthy -- while also keeping it simple and easy?

Well, the answer could lie within "superfoods."

These are foods rich in nutrients that can help keep you full, like broccoli.

BENEFITS OF 'SUPERFOODS'

Fitness expert Andrea Marcellus says you can keep your recipes to three ingredients, and keep eating what you already like.

"Just 'superfood' regular meals that you eat," Marcells explained.

Marcellus is an ACE-certified personal trainer, life strategist, author of The Way In: 5 Winnings Strategies to Lose Weight, Get Strong, and Lift Your Life, and the CEO of the mobile app, AND/life.

"Find a way to boost [your meals with] broccoli, you know, kale, cabbage, cauliflower. These foods that we eat all the time that we know."

For instance, a favorite meal of mine is chicken with salsa verde, and I sauteed some broccoli to give it an extra kick.

DISCOVERING NEW FOOD CAN REDUCE STRESS

Marcellus wants to emphasize that all this extra time is an opportunity experiment.
So maybe, she says, you can try a different veggie each week.

Marcellus says discovering new foods will give you something to look forward to, reduce cortisol levels caused by stress, and keep you in a positive mindset.

HOW TO BEAT ANXIETY-DRIVEN CRAVINGS

If you find yourself overwhelmed by anxiety-driven cravings, Marcellus suggests you stop what you're doing and move around for at least four minutes.

She says that's enough to get your heart rate up, so you won't be hungry, and you'll just want to drink water.
