We're Open Colorado: Provecho supports restaurants and community members

COLORADO SPRINGS — There's no arguing that the Coronavirus (COVID-19) has changed a massive portion of our daily lives.

In the midst of these changes, many local businesses are finding ways to overcome and adapt to keep their doors open, while at the same time, help those around them.

Similarly, businesses hit hard are reporting a tremendous outpouring of support from the community.

This outpouring reminding all of us that while this global epidemic has changed so much, it HASN'T changed people's desire for community.

This is We're Open Colorado, a segment dedicated to highlighting local businesses that are still open and finding unique ways to serve the community.

With all of this in mind, let's take a look at Provecho Fresh Mexican Cuisine which is working to promote other local restaurants as well as recognize the efforts of individuals who are working to give back and support the community in ways that they can.

Over the past few weeks, this Springs restaurant has been working to provide special deals to customers on top of purchasing food from other restaurants and using their own social media accounts to promote those businesses.

In addition, the organization has started to recognize, with a gift-card, those in the Springs who are working to promote positivity and give back to the community in ways that they can.

"I feel like when you reach out into your community, that's where the healing is," stated Carole De La Fuente, owner of Provecho, "so I really feel like reaching out and giving back rather than taking. Because we could very well lose our business at the end of the day, and if we're just sitting here crying about that, that's not helping anyone."

Carole hopes that in addition to supporting those around her she can also encourage others to give in ways that they can.

"She's a part of the community and doing what she can for other people," stated Meagan Thomas of Springs Native and a winner of Provecho's champion of the week award, "it's just really cool to see people come together at a time when it could be the opposite."
