PUEBLO — A popular Pueblo coffee shop is now expanding into Colorado Springs.
Solar Roast Coffee has just opened its newest location in downtown Colorado Springs near the corner of Tejon and Bijou.
Solar Roast Coffee is known for its unique approach to roasting coffee beans, they don't use gas or propane in the process but rather the power of the sun as owner Michael Hartkop explains, "we use a solar machine, it's a solar potable tank, so we generate electricity of the roof of our coffee house building in downtown Pueblo, and then we use it through these high efficiency ovens for roasted coffees and solar electric power."
Coffee drinkers say the coffee tends to have a deeper, smokier taste than other coffee's roasted at lower temperatures.
