CAÑON CITY — The Royal Gorge Railroad in Cañon City has converted a 1924 caboose into an eatery under the bridge near the train depot.
It's called Happy Endings, and specializes in gourmet crepes, coffees, and espressos.
"To refurbish it back to almost new again,and to use as something the public can see as a museum piece, but also be functionable with retail with food and beverages," said Jeremy Garnett from the Royal Gorge Railroad.
Most of the restoration was done by contractors from Pueblo.
