If you are of a certain age, you no doubt recall when Betty Crocker used to sell a Butter Brickle cake mix. It was a fan favorite that many families often served at special occasions, so it has a nostalgic appeal for many of us. But, alas, Betty Crocker discontinued the mix in 1990 so the cake has become a distant memory for many people.

Yet now you can recreate this delicious, vintage cake with just a few simple ingredients. Betty Crocker has provided the recipe on their website, so now we can finally enjoy Butter Brickle Cake once again!

Need something to jog your memory? Butter Brickle was a brand name for a candy and ice cream topping from the South Dakota company Fenn Bros Ice Cream and Candy Co., which introduced it in the 1920s at the Blackstone Hotel in Omaha, Nebraska. Fenn Bros. was shut down in 1971 and its assets went to HEATH Bar and then The Hershey Company when it bought HEATH Bar in the 1990s — but the good memories remain.

Butter brickle basically consists of little toffee candy bits that you mix in to desserts, such as ice cream or cookies. They add crunch as well as flavor, and were named for an old English variant on the world “brittle.” You can see a reminder of Butter Brickle’s influence on HEATH Bar bags of toffee bits, which call them “bits o’ brickle.”

As you can see, Betty Crocker advises using the Betty Crocker Super Moist Yellow Cake Mix (which you can find in your supermarket or local superstore, such as Target or Walmart). Now, this yellow cake mix is not the same as the traditional Brickle Cake mix that we all knew and loved from Betty Crocker, but with just a few simple embellishments you can recreate those yummy flavors of the original.

The trick is to add a package of butterscotch instant pudding and pie filling mix to your dry ingredients. (Find it in the pudding aisle or check on Amazon).

And, of course, no brickle cake would be complete without toffee bits, such as Hershey’s HEATH English Toffee Bits. These are what give the brickle cake such a sweet and delicious crunch.

This twist on the original butter brickle cake is perfect for the chocolate lovers in your life.
