Here’s a new spot to add to your rotation of Tex-Mex restaurants

COLORADO SPRINGS – There’s a new stop to add to your rotation of Mexican food in the Springs.

Chuy’s opened up it’s first Colorado Springs location Tuesday at Briargate and Chapel Hills. The Austin-based Tex-Mex chain boasts a menu that is homemade and fresh including tacos, burritos, enchiladas and guacamole.

This is the chain’s fourth location in Colorado and all the staff, they’re local.

“We hired 165 people over the last six weeks to open this restaurant, cooks, bartenders, servers, bussers everything,” said Joanna Hicks, general manager.

Hicks says they’re excited with the new location and look forward to getting involved in the community.
