Acorn, Pomegranate, Arugula and Lentils du Puy

1 acorn squash
1 orange, peeled and cut into segments
Maple Syrup
4 oz. arugula
4 strips bacon, diced and cooked to crispy
1 pomegranate, seeds removed
6 oz. cooked French green lentils
4 oz. goat cheese, crumbled
Sherry vinegar
Extra virgin olive oil
Salt and pepper to taste
Cut acorn squash into rings 3/4 inch thick. Rub with maple syrup, olive oil, salt and pepper. Roast in oven 30 minutes at 350 degrees until fork tender. In a large mixing bowl, add one orange, arugula, bacon, pomegranate, cooked French green lentils, goat cheese. Toss ingredients and dress lightly with sherry vinegar and olive oil. Season and serve inside the squash ring.
