Top Sirloin Diane


4 6oz Top Sirloin Steaks
1tbs Oil
Salt & pepper

1 c. sliced mushrooms
1/2 c. heavy cream
2 oz. brandy
1 tsp. shallots, chopped
1 1/2 c. brown sauce
1 tsp. Dijon mustard
1 tsp. Current or Lingonberry Jam

Clarified butter or Vegetable oil(enough to cover pan bottom)


Heat oil in fry pan. Salt and pepper fillets. Fry to taste (medium rare). Remove meat. Add shallots, mustard, Jam, mushroom; sauté for 1-2 minute. Add steaks back to pan; add brandy - light to flame! Reduce heat; add brown sauce, cream and heat without boiling.
