Yogurt Marinated Colorado Lamb Chop
Yields 6 Portions
12 4oz Lamb Chops
16oz Greek Yogurt
1/2 Cucumber (peeled)
4oz Fresh Dill (stemmed)
1/4c Honey
Salt & Pepper to taste
In your food processor place the yogurt, cucumber, honey and dill. Mix till the cucumber is pureed. In a large Ziploc bag place the lamb and yogurt mixture and seal. Place in the refrigerator for 4 hours.
After the 4 hour is up remove the lamb and grill to desired temperature, basting with the cucumber mixture.
Serve with wild rice and vegetables or your favorite sides.
