Yields 4
Stuffed Colorado Bass
4 8oz Colorado Striped Bass Filets
1/2lb Cooked Spinach
1c Sundried Tomatoes
1c Caramelized Onions
1oz Olive Oil
Salt & Fresh Cracked Black Pepper
1c White Wine
1zo Lemon Juice
Place Bass filets on a cutting board skin side down. Season with salt and pepper; evenly distribute the tomato, onion and spinach. Roll from tail to head and secure with a tooth pick or skewer. Coat the bottom of an oven safe baking dish with the olive oil, place the fish in the pan and add the wine and lemon juice. Bake in a preheated 375 degree oven for 12-15 minutes.
