Savage Kitchen - Cliff House Papaya Salsa

GRILLED COLORADO LAMB CHOPS
PAPAYA SALSA

8 4OZ LAMB CHOPS

2EA SMALL DICED FRESH PAPAYA
1TBS SMALL DICED GREEN PEPPER
1TBS SMALL DICED RED PEPPER
1TBS SMALL DICED ANAHIEM PEPPER
1TBS SMALL DICED RED ONION
1TBS CILANTRO, CHOPPED
JUICE OF 2 LIMES
KOSHER SALT TO TASTE


PROCEDURE

Clean Papaya and small dice along with the peppers and onion. Chop the cilantro and juice the limes. Mix all ingredients thoroughly in a bowl and set in the refrigerator till needed.
Season the chops with salt and pepper. Grill to desired temperature and serve with the salsa.
