Mustard Lamb Lollipops
Yields 2 Dozen
3 Ea 8 Bone Lamb Racks
4 Cup Pistachios
2 Cup Bread Crumbs
½ Cup Olive Oil
1 Cup Dijon Mustard
1 Cup Yellow mustard
2 Tbsp Vegetable Oil
Salt and Pepper to season the lamb
Clean the silver skin off the lamb racks and divide the rack into 8 pieces by cutting down through the meat between each bone. Season each piece of lamb with salt and pepper. In a large sauté pan over medium heat add the vegetable oil and quick sear each piece of lamb on all sides. Place to the side to cool.
Place the pistachios in a food processor and pulse until the pistachios are equal in size to the bread crumbs. Add the bread crumbs and olive oil; mix well.
In a small bowl mix the two mustards together. Coat each lamb piece with the mustard and pistachio mix and place on a lightly greased baking pan.
Preheat your oven to 350 degrees and bake for 8-10 minutes.
