Savage Kitchen Lime Pork Tacos
1lb Pork Loin (cleaned and cut into thin slices)
1/4 teaspoon Salt
1/8 teaspoon Freshly Ground Black Pepper
2 teaspoons Extra Virgin Olive Oil
3 tablespoons Chopped Cilantro
2 1/2 tablespoons Fresh Lime Juice
1/2 cup Roma Tomato (chopped)
1ea Avocado (small dice)
2cups Cheddar Jack Cheese
1cup Caramelized Onions
8 (6-inch) Flour Tortillas
8 Lime Twists (for garnish)
Mix all ingredients in group 1 in a medium size bowl and let marinate for 1 hour.
Sauté the pork in a large sauté pan over medium heat for about 5 minutes or until the pork is cooked to your desired doneness. Lightly heat the tortilla and place the pork and layer in the ingredients from group 2 saving the lime twists to set on the side of the taco for a garnish.
