Cliff House
Crawfish Cakes
2 lb Cooked Crawfish
3/4 Cups Red & Yellow Pepper (small dice)
1/4 Cups Red Onion (small dice)
1/4 Cups Chives (small dice)
2 ea Whole Eggs
1/3 Cups Dijon Mustard
1/4 Cups Mayonnaise
1 tsp Tabasco
1 fl oz Worcestershire
1.5 T Old Bay Seasoning
1 t White Pepper
Juice of 2 Lemons
3 - 4 cups Japanese Bread Crumbs
PROCEDURE
It is important to cut all vegetables the same size so you will have all the flavors evenly through the mixture. Mix eggs, mustard, mayonnaise, tabasco, worcestershire, old bay and pepper in a separate bowl. Add the dry mixture (your vegetables) to the wet. Mix thoroughly and add the bread crumbs.
Press into 2oz cakes using a circular mold. Cook in a non-stick sauté pan with a little oil over medium heat till golden brown on each side.
