Savage Kitchen - Cliff House Braised Chicken

The Cliff House @ Pikes Peak
Yields 4 Dinners
Braised Chicken


4ea 6oz Airline Chicken Breast
6EA Roma Tomato (Small Dice)
3c Heavy Cream
2 Shallots (Small Dice)
2 Garlic Crushed Cloves
4oz Olive Oil
4tbs Butter

1lb Fresh Fettuccini (cooked)
6oz Goat Cheese


PROCEDURE
In a 12 inch sauté pan heat oil over medium heat, when oil is hot add the garlic, shallots, chicken, tomatoes and cook till the tomatoes start to break down add Cream and bring to a simmer. Cook for 20 minutes. Remove the chicken and continue to cook the sauce to cook out some of the moisture: about 6-10 minutes then add the butter and stir till the butter melts. Cut the chicken and serve over fresh pasta. Finish with Goat cheese.
