Black Angus Tournedos
Serves 4
4 6oz Beef Filets
1c Veal Demi
2 medium size shallots (diced)
1/2c Red Wine
1/4c Fresh Grated Horseradish
Cook filets to desired doneness and set aside to rest. In a small sauce pan place the shallots and red wine and reduce by 1/2 over medium heat. Add the demi and bring to a simmer.
Serve with your favorite starch and vegetables. Use the fresh horseradish as a garnish for the filet.
