Nothing's better at Christmas than potica (po TEET suh)

The smells of sweet dough and walnut filling are wafting through bakeries across Pueblo as mom and pop businesses work to meet a growing demand for Potica.

Pronounced Poh-teet-za or sometime Pov-teet-za, the walnut rolled sweetbread has its roots in Slovenian and Croatian culture. However, it's been a holiday staple at tables in Pueblo for generations.

At Mauro Farms in Pueblo County, Carla Houghton and her relatives have mastered the mass production process of baking the delicacy. Their ovens will bake thousands of loaves in the coming weeks.

Thanks to the internet, Mauro will ship hundreds of loaves of potica to homesick customers across the country.

"There's probably 600 packages in the freezer right now ready to go out today," Houghton said.

Several bakeries and stores in Pueblo sell potica, but Mauro's is currently the only one doing so online. Visit them at maurofarms.com to place an order.
