Making a better cheddar: specialty store is big on cheese

The pride of Wisconsin is hoping to please palates in Pueblo. The new Springside Cheese Shop in downtown features the award winning cheeses of the Hintz family.

Owner Keith Hintz says his family has been making cheese in O'Connell Falls, Wisconsin for over a century.

He says he opened the boutique cheese shop last month to share his family's heritage with customers here in Southern Colorado. Hintz ships the cheese directly from Wisconsin to Pueblo.

"It'll be more fresh and you'll have someone that can talk about it first hand whose actually made it."

Certain varieties already show a melting of flavors between the two communities such as the Monterrey Jack that's made with Pueblo chiles.

The Springside Cheese Shop is located is 517 W. 5th Street between Greenwood and Elizabeth in downtown Pueblo.
