Buffalo Burger
4 8oz Bison burgers
4 Burger buns
4 Slices Pepper jack cheese
Corn Relish
1 Yellow onion (shaved thin)
1 cup Corn kernels
¼ cup Diced red onion
½ cup Diced tomato
1tbs Guajillo Chile powder
1tbs Rice wine vinegar
Salt & Pepper to taste
Chipotle Mayonnaise
1/2cup Mayonnaise
1-2 Chipotles in adobo
1-2 tbs Honey
Fried Onions
1 Shaved (very thin) yellow onion
3tbs all purpose flour
1 tbs blackening spice
2qt frying oil
Put corn kernels on a sheet pan and place in a 350 degree oven for 8-10 minutes or until light golden brown. Cool corn in refrigerator. Place cooled corn, onion, tomato, chile powder and vinegar in a bowl and mix. Season to taste with salt & pepper and let rest in the refrigerator for about 20 minutes.
Mix with the mayonnaise and honey. Dice the chipotle: add a little at a time till desired heat is reached.
Heat oil in fryer or sauce pan to 350 degrees. Mix flour and spice together and coat onions. Fry the onions till golden brown about 1-2 minutes. Remove from oil and cool.
Cook burger to desired temperature and composed with all ingredients.
